Cyril's has created a month-to-month cheese club where participants can opt in depending on how they feel about the selected cheese and whether their schedule will support that month's purchase of a pound of cheese.
How does it work?
We offer a membership each month where potential cheese heads can join the club for that month by committing to purchase a pound of the cheese. Cyril’s orders the cheese and hosts a pick up party where members get to learn about and taste the cheese alongside some recommended pairings.
What does it cost?
The cost varies depending on the cheese selected each month. The range will most likely be from $25-50. This gets you a pound of cheese an an invite to the pick up party which is members-only.
There is also a $10 ‘just-trying-it-on’ membership that allows you to attend the pick up party but not purchase a pound of cheese.

How are the cheeses selected each month?
Cyril’s selected the very first cheese. The next selection will be determined by club members at our first pick up party- we will vote on a list of three or four cheeses recommended by Sasha- Cyril’s owner and cheesemonger. Note: This is one of the best parts of participating in cheese club!
How long does my membership last?
Your membership is good for the month that you join. If you want to be a member again, you would sign up the next month by committing to purchase a pound of the selected cheese through our website.
What if I cannot make it to the pick up party?
That is a sad, but not unmanageable situation. If you cannot attend the party- you can send an emissary in your stead and organize a cheese hand off with them at a later date. You can also arrange to collect your pound of cheese at any other time Cyril’s is open for business. Cheese club members have one month to pick up their cheese- this both allows us to make sure that no cheese is thrown away and that you're getting the cheese that is still in good condition.

Pick up Party Date: Thursday, February 23rd at 6:30pm.
February's cheese is an island cheese made on Terschelling, a winter-appropriate drizzly, damp island that is part of the West Frisian Islands in Northern Holland, along the edge of the Wadden Sea (pictured at left). The Dutch excel at Gouda and Terschelling is just another piece of delicious evidence in support of their prowess.
Made from organic sheep milk, on the farmstead of Jolanda and Gerben Bakker who also keep themselves busy with vegetable farming and educational programs for children about farming and sheep. Thank goodness someone is fostering the next generation of shepherds!
Wheels are aged for 8-12 months by our heroes at L'Amuse Fromagerie (Betty and Martin Koster) who have also wowed us with L'Amuse Gouda, Brabander Goat Gouda, and Wilde Weide. We are in great hands this month.
This cheese and the pick up could serve as wonderful antidotes for the gloom we all anticipate in Portland in February. We hope you'll join us!

Just Trying it on ($10): Come to the pick up party on Thursday, February 23rd at 6:30pm, taste and learn about the cheese and see if our cheese club is something you want to try next month. Supporting the Cyril's cheese club at this level also earns you a vote for future cheese we will feature.
One Pound, No Party ($46): This level of membership gets you a pound of Terschelling- a sheep milk gouda from Holland that is as fun to eat as it is to say! If you want to come to the pick up party on Thursday, February 23rd at 6:30pm, please see "One pound, Party of one" or "One pound, Party of two".
One Piece, Party of one ($51): This level of membership gets you a pound of Terschelling- a sheep milk gouda from Holland that is as fun to eat as it is to say! This level of membership includes an invitation for one to join us at the pick up party on Thursday, February 23rd at 6:30pm, where you can learn about the cheese, taste, and experience pairings. If you want to bring someone to the pick up party please see "One pound, Party of two".
One Pound, Party of two ($56): This level of membership gets you a pound of Terschelling- a sheep milk gouda from Holland that is as fun to eat as it is to say! This level of membership also includes an invitation for you and one guest to join us at the pick up party on Thursday, February 23rd at 6:30pm, where you can learn about the cheese, taste, and experience pairings.
