Our first white wine is finally ready. Come and try our 2013 Pinot Gris. This Gris comes from Mistletoe Vineyard (the source for our Willmatte Valley Pinot). We’ve given this wine some additional time to age- leaving it on the lees (spent yeast) for the whole 13 months.
We also exposed the wine to oxygen (on purpose!) to allow it to develop some sherry notes and evolving the profile to express tropical fruit and almond notes. We bottled last month without any sulfur addition… ever. Only 55 cases were produced.
A perfect meat and cheese wine and one that loves a good braised or roasted chicken dish! On the menu now at Cyril’s. Retails for $19 (read: a Steal).
