There is a fantastic event celebrating cheese that happens in Portland once a year- it's called The Wedge.
Cyril's is hosting a Cheesemaker Dinner on the eve of this year's Wedge.
What: Five courses prepared by our kitchen each incorporating a different Oregon cheese, followed by a cheese course featuring yet more cheeses from Oregon producers. Beverage pairings- including wine, cider, and beer- will also be available. See the food menu below.
How Much: Dinner is $60. Beverage pairings with each course is an additional $35. (Gratuity is included).
When: Friday, September 30th. 6:30pm

To begin: Dutchman’s Peak (By George Farm) Frico with Dutchman’s Peak mousse and herbs
First course: Salad of Iris (Briar Rose Creamery) and walnut crumble with late summer/early fall pears, frisee/endive
Second course: Roasted cauliflower with Clothbound Cheddar (Face Rock Creamery), pickled grapes, parsley, grain mustard sauce
Third course: Braised Carman Ranch brisket, crispy beets, Flora Nell (Rogue Creamery) blue cheese sauce
Something sweet: Chèvre (Portland Creamery) ice cream with cardamom, pistachio, and rose
A strong finish: CHEESE COURSE featuring unique offerings from all of the cheesemakers above
What is The Wedge?
If cheese is one of your favorite foods then The Wedge is basically like a farmer's market designed expressly for you.
On Saturday, October 1st- in front of the Green Dragon Bistro and Brew Pub- nearly every cheesemaker in Oregon (and a couple from Washington and California for good measure) will be setting up a stand to sell their gorgeous cheeses.
They will be flanked by all sort of local producers who make things that go beautifully with cheese- jams, sauces, charcuterie, crackers, wine, and cider.
